Chickpea Tomato Pasta Sauce

- Prep: 20 minutes
- Cooking Time: 30 minutes
- Makes: a minimum of 6 servings
- Quick Tip: this sauce tastes much better if left in the fridge overnight and served the next day
- Quick Tip: this recipe can also be easily doubled
Chickpea Tomato Pasta Sauce
- 1 tablespoon olive oil
- 2 garlic cloves
- 1 small onion
- 28 oz can diced tomatoes undrained
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried basil
- 3/4 teaspoon dried oregano
- 1/2 teaspoon sugar
- 1/4 teaspoon pepper
- 19 oz can chickpeas undrained
Instructions
- Saute garlic and onion with the olive oil until soft.
- Add all other ingredients except for the chickpeas. Simmer uncovered for 15 minutes.
- Add chickpeas with the liquid. Simmer uncovered for 10 minutes or until thick.
- Serve over your favourite pasta and sprinkle with parmesan.

Okay, hon, can I get you onto Live Journal? I started a community there called tw_cooks (for Torchwood fans to exchange recipes in a fanfic environment) but don’t see any way to interest Blood Ties fans into the same thing. And if you and I both do it, maybe we can get it going there.
BTW, I’m totally making this recipe next weekend. It’s snowing here today but by next weekend it’s supposed to be spring again.

My parents are in the same boat as you. After a record breaking 28 Celcius on Monday they’re now getting snow!
